Quite Thursday

All in all, it was a slow quite day today. No excerise, did some housework nothing exciting. The kids were very good today and Robert actually came home early today which was a great suprise. Me and Hailey got to go visit with some friends and see a new baby tonight while Christopher and Daddy had "boys time" as Christopher told me. on to the eats:

13:23...



is how long it took me to do a mile on the treadmill tonight. This is not a bad time, but I would like to get it down to 10 minutes or less. So that is my new goal to add to the list. I did 20 minutes on the treadmill tonight, I also tried the elliptical machine but I felt like I was gonna fall off so I only stayed on for about 4 minutes. I also did one 15-min mile from my Denise Alston video this morning. Soo...all in all it was a good workout day! Yay me :) Just as a side note, let me just say it was very cold out this morning we went to the park for an hour this morning and were freezing by the time we left! I am so ready for Spring. On to the eats for today:

Breakfast:
cinnamon apple oatmeal
water
Lunch:
bowl of fruit salad
pile of pretzels(about 20)
water


Dinner:
1 serving garlic butter rice
Cream corn
2 Raspberry Chipotle monterey jack cheese stuffed chicken sausages
1 glass of Sunkist


*I found these sausages at Wal-mart last week and they sounded very yummy. I thought they were good, but they did have a serious after bite to them. Robert said they were good, but they were alittle too spicy for him and he didn't really care to have them again.

French Toast Casserole

Ingredients:

1 C firmly packed light brown sugar
1/2 C(1 stick) butter
2 tbls light corn syrup
10 slices French Bread, about 1 inch thick
2 C milk
4 lg eggs, beaten
1 tsp vanilla extract
1/8 tsp salt
1 quart fresh strawberries, cleaned, sliced
1 tblsp honey
1 tblsp lemon juice
confectioners' sugar

-place brown sugar, butter, and corn syrup in a med saucepan. Cook over low heat until mixture come to a boil; boil 1 minute. Pour into 13x9 inch baking dish. Arrange bread in single layer over sauce.
-combine milk, eggs, vanilla, and salt in a med bowl. Whisk until smooth. Pour over bread in dish. Cover; chill overnight.
-combine strawberries, honey, and lemon juice in a med bowl. Chill until ready to serve.
-Preheat oven to 350. Cook casserole until knife inserted in center comes out clean and bread is browned, 45-55 minutes. Sprinkle lightly with confectioners' sugar. Serve warm w/ strawberry mixture.

*I did this for dinner, so I put it together in the morning and let it sit all day and it was great. I didn't have a whole thing of strawberries so I did a mixed fruit on the side. Hope you enjoy if you try it!

Fat Tuesday

So, I am not sure what the background is on Fat Tuesday, but figured it was a fitting title :) My sweet baby girl turned one today! I can't believe how fast this year flew by. We didn't do anything special today, since we had her party over the weekend. I can't believe it, but I didn't even give her any cake on her actual birthday-and there is still a whole plate of cupcakes leftover from the party. The kids and I went to Wal-Mart and Costco, two of our favorite spots :) I did do some sampling at Costco, and it was soo good. We have discovered that both Christopher and I like expensive cheese, but I am too cheap to actually buy it so we only get it when we are sampling at Costco or A Southern Season. The kids had hot dogs in the snack area while we were there but I hate their hot dogs so I didn't eat lunch there. I tried a new recipe last night, which was not diet friendly, but soo yummy I'll post it in a few. I did 1 15-min mile of my video. The kids a made off with the remote for our vcr/dvd player so I can only access the first mile of my dvd, which is getting old but there doesn't seem to be a way to get to anything else on the menu without the remote!

3 sausage patties
1/4 C fruit salad(sliced strawberries, orange pieces, grapes)

3 Hersy's Bliss Rasperry filled hearts(6 is a serving)
handful of pretzels
water

Weigh in day...

I have to get better over the weekends! Fri morning was really bad, we walked and went to the park with friends but within minutes of getting to the park both my kids melted down and we had to leave, the plus is that at least I did get a walk in. Sat we had Hailey's first birthday party w/ all the grandparents, Uncles, and Aunts here at our house talk about a full-house! The cake and cupcakes came out great! I was impressed with myself :) Not sure how to add pics to a post so if I figure it out I will add one.

No actual workout Sat, but I did spend a solid 2hrs cleaning in the morning, and was sweating by the time I was done. Sun me and the kids just hung around the house and didn't do much of anything. Both the kids went to bed early, so Robert and I were able to do fondue for dinner. We ate way more than we should have but it was soo yummy! And doing it at home makes it so much more affordable!
It is lunch time here, so after lunch Hailey will go down for her nap and I am going to do 2 miles from my video. I haven't kept up with all my eats for the last few days, obviously there was cake, but overall not too much out of the ordinary.
Unfortunately I did gain a pound this week, which I am very unhappy about since I was hoping for another 3-4 lb lost. We only have 11 days til we leave for our cruise, so it is not looking like I am going to lose the other 10 lbs I was hoping to but you never know. Robert was joking around about doing a colin cleanse the other day to drop a few pounds, I have never tried it but I have to say I am very tempted to try it and see if it works...

Man, my feet hurt

So, it is days like today that I feel really old! I used to could wear any heels I wanted all day and be fine, today I walked around the mall for about an hour and a half and then wandered around Target and my feet are killing me! (I was wearing 4 inch heels) I would say this definately counts at excerise. I also did the easy walk 15-min mile on my video this morning so I am feeling pretty good about my movement today.

1/2 string cheese
1/2 oatmeal cream cookie
*I only got have of each because my little piglet stood beside me screaming cause I wasn't feeding her fast enough

Birthday installment one...

So, I am starting at the end of the night, cause it was so great! For my birthday I asked my Dad for dinner once a month. He picks the menu, cooks it at his house or mine, and then we get to eat it. I am a decent cook, but my dad is an awesome cook, so I was very excited when he decided to actually do it. I will get to the menu in a few...I wish I would've taken a picture of each course it was so pretty.
I actually worked out today, even though I couldn't get outside it was soo extremely cold and windy today we could walk but I did my video. I did the fat burn interval 15-min mile and the easy walk 15-min mile. I am feeling much better after 3 days of actually doing some kind a exercise, so hopefully I will keep it up.
We didn't do much today just housework and hit the Dollar store for supplies for Hailey's party this weekend. I can't believe my sweet baby girl is almost 1 already, it makes me soo sad to think about it. This year has totally flown by, I really don't know where it has gone.

Snack:
1 string cheese
10 Quaker Blackberry Pomegranate mini rice cakes-these are soo yummy, today was the first time I tried them.

shrimp and grits(shrimp, sausage, mushrooms, carrots)
apple/blueberry tart w/ vanilla ice cream

*This dinner was excellent! It was the first time we have ever had fennel, pork belly or the shrimp and grit combo and I would definitely eat it all again!

Starting over

So, I feel like I am starting all over after a week and a half of basically no exercise and not eating very well. I only did the easy walk 15-min mile today, but at least it is something. It was another dreary nasty day here again today, so we didn't get outside, which is fine because Christopher has been running a fever on and off for over 24-hrs now. Hopefully he will be feeling much better in the morning or I guess off to the doctor it is for us. Food wise I didn't do to great today, but it will take a few days to get back into eating low cal meals and not snacking again.

So, I am super slack!

So after like a week, I am back. I haven't really kept up with my food, out of laziness, I didn't exercise much, and as you can see I haven't been blogging. It was taken over a week for me to recover from the hated snow/ice, that is just sad. But my back is finally like 99% better, still don't know what I did but it is better and that's what matters at the moment. The kids and I took an almost 2 mile walk w/ friends this morning going to and from the park. It was chilly but ooh so nice to get out and get some fresh air!
On a very good note, today was weigh day and I actually lost 4 lbs this week!! Woohoo! So, that makes up for the 2lbs I gain last week and lost another 2 :) Which puts my total at 10lbs. I am very happy about this, now if I could just actually see it in my clothes, hopefully the next 5 will actually start to be visible. I am also getting very excited about the cruise we are getting ready to go on! I am still feeling a little nervous about leaving the kids, but I am also really looking forward to having a break and just spending some time with the hubby. I would really like to lose another 10 lbs before we go, but I am going to have to really get in gear and stay there between now and then so we shall see.
Well, on to today's eats:

*I did eat most of it, but my little muncher (Hailey) who has to eat some of everything she sees had a few bites

Junk food! I didn't do a big spread last night for the super bowl, because I totally forgot it was Superbowl Sunday and put dinner in the crock pot and then Bunkey was like where is all the snacks so tonight I did a big spread of snack foods for dinner.

*Please add some friends of our to your prayers. Their 6 or 7 week old baby was hospitalized this past week with RSV. She is finally off oxygen today and seems to finally be pulling through but it has been a rough several days. She was on fluids and oxygen for 2.5 days and had a collapsed lounge.

So,today I woke up with a horrible back ache, like to the point I could barely left Hailey or walk. So no excerise again today, I am really hoping to feel better tomorrow since I have a busy day. Not much else to report today so here are the eats:

Hating this snow/ice!!!

So I didn't post all weekend mainly because I was having a mopey pitty party and eating way too much! We got quite a bit of snow, ice, and sleet, and the kids and I weren't able to do much of anything all weekend. Hailey did already in the snow first thing Sat morning but had had enough after about 30 min and had no use for it from then on. Christopher had fun, but since he can't be outside by himself and I can't leave Hailey inside by herself we didn't spend much time in the snow. Being stuck inside we did alot more snacking than usual which is not good! And on top of the snacking, I had 2, thats right 2 birthday cakes here this weekend (one for Bunkey and one for me)! I am not going to list my eats for the weekend, mainly because I couldn't tell you everything I ate. I need to get out of this house!! I don't know if we will try to venture anywhere tomorrow or not, I have some baking to do and a new soup recipe I want to try.
Today was weigh in day, and it was ugly! I gained 2 lbs!! :( And the really bad thing is that I am pretty sure I gained the whole 2 lbs in the past 2.5 days. I have to do some serious moving this week to lose these 2 plus hopefully another 1 lb by next Monday.
Anywho, hope you had a good weekend. Going to watch some tv and cuddle w/ the hubby :)
